- Grill Cooks will be cooking on the hotline alongside our chefs, picking up dinner, IRD, and banquet items as well as the preparation and execution of items on the AM Production list.
- PM Lead/Tournant PM Supervisor Sous Chef Banquet Chef Chef de Cuisine Executive Chef
- Checking pars at beginning of shifts and able to determine necessary preparations for station and hotline set-up noting any out-of-stock items or possible shortages using said prep lists.
- Dating all food containers, consolidating, and rotating as per HHM and CA food handler standards (FIFO), making sure that all perishables are kept in proper containers and at proper temperatures including all products being received from vendors such as produce, seafood, proteins, and dry goods.
- Assisting in suggestions for setting up plans of action to correct any food cost problems, mitigating food waste, and loss as per HHM standards.
