Machine loading – Load flats of shell egg unto the egg transfer machine (Old line 4/5) Candling – Remove all damaged, defective and dirty shell eggs according to USDA specifications Breaking machine operator – Remove pieces of shell and inedible egg product by flipping a lever and diverting the inedible egg product to a holding tank Flat washer and pallet washer – Load dirty flats or pallets into the designated machines and unload clean ones to the proper location.
