CDM CDM Position Name Zest Culinary Services Company At a Glance Here is some basic information about this Position: Position Location Flowood, MS Job Type Full Time Remote Type Onsite Job Description Certified Dietary Manager (CDM) Location: Flowood, MS Job Type: Full-Time Position Summary The Certified Dietary Manager (CDM) is responsible for directing and coordinating the daily operations of the Dietary Department. This position ensures residents receive safe, nutritious, and appetizing meals while maintaining compliance with federal, state, and local regulations, including Mississippi Department of Health requirements and CMS standards. The CDM works collaboratively with the Registered Dietitian, nursing staff, physicians, and other departments to promote optimal resident nutrition and satisfaction. Essential Responsibilities Manage daily foodservice operations, including meal production and service. Supervise, train, schedule, and evaluate dietary staff. Ensure compliance with food safety, sanitation, infection control, and HACCP standards. Monitor food quality, temperature, portion control, and presentation. Assist with menu planning, therapeutic diets, and resident food preferences in collaboration with the Registered Dietitian. Process diet orders and ensure accurate meal service according to physician orders. Maintain food and supply inventory; order products within budget guidelines. Conduct routine kitchen inspections and implement corrective actions as needed. Participate in resident care planning, Quality Assurance (QAPI), and interdisciplinary team meetings. Maintain department records, including sanitation logs, temperature logs, inventory, and staffing documentation. Prepare for and participate in state and federal surveys. Promote excellent customer service for residents, families, and staff. Ensure compliance with all company policies and applicable healthcare regulations. Qualifications Current Certified Dietary Manager (CDM, CFPP) credential in good standing. High school diploma or GED required; associate degree in nutrition, foodservice management, or related field preferred. Minimum of two years of foodservice management experience, preferably in long-term care, rehabilitation, or healthcare. Knowledge of CMS regulations, food safety standards, and therapeutic diets. Strong leadership, communication, organizational, and problem-solving skills. Proficiency with Microsoft Office and dietary management software preferred. Physical Requirements Ability to stand and walk for extended periods. Frequently lift and carry up to 50 pounds. Ability to work in hot, cold, and humid kitchen environments. Ability to bend, stoop, reach, and perform repetitive tasks.
