We boast nearly 6 acres of organic gardens and permaculture food forests that we harvest much of our food from. We are currently looking for a Fire Cook to join our team. Applicants should have a solid foundation in restaurant operations and a passion for the culinary arts. Essential Job Functions. Reporting directly to the Chef and Sous Chef, the seasonal Fire Cook is responsible for overseeing the execution of the grill and pizza oven during dinner services. You must know your way around a grill, and pizza oven experience is a plus. You must have the ability to maintain your composure during high-pressure situations resulting from business levels and time constraints.Food Preparation & Presentation. Ensuring the highest level of execution in the preparation of all meals, properly executing preparation and plating to Chef standards.Adhering to Bodhi Farm Recipes. We love new ideas, but you are to adhere to our established recipes unless you have received permission from the Chef to deviate. Presentation. Ensure that all food is presented in a way that is consistent with the standards that have been established. Get shit done. Ensure that you and your team do whatever it takes to establish Bodhi Farms as a world class culinary destination. Seasonal Field Kitchen Restaurant. Ensuring the smooth operations of the seasonal Field Kitchen during the summers.Pizza Oven. Light the fires, clean out the ashes, make sure that the pizza oven is properly maintained.Grills. Ensure that the grills are cared for, cleaned and maintained. Walk In Cooler. Ensure the proper cleaning and organization of the walk in cooler.Pantry. Ensure the proper cleaning and organization of the pantry.Running / Logistics. Managing the required back and forth transportation requirements for dishwashing, food delivery and waste management. Make it Great. Ensure best in class quality and presentation of all prepared meals.Lead Cook Responsibilities. Backyard Kitchen. Taking ownership over the catering kitchen and all operations within. During the summer and fall it acts as a prep and catering kitchen and during the winter and spring it acts as the primary restaurant kitchen until the construction of the restaurant is complete. Sauces. We have several signature sauces and dressings that are continuously prepared throughout the week. Maintaining A Meticulous Workspace. Maintain a clean workspace, putting away ingredients and equipment as soon as you are done with them, washing utensils and countertops. Refrigerators. Ensure that the refrigerators are clean and organized to the food safety guidelines. Pantry. Assist in cleaning and continuous organizing of the backroom and all food storage areas.Daily Cleaning. Ensure that all kitchen spaces are thoroughly cleaned after each meal and that regular deep cleanings are scheduled weekly. Dishwashing. No one on our team is above dishwashing. We all work together. Catering. Our catering operations change with the seasonality of our business. Winter Catering. During the winter, you support the Chef in the catering preparation and execution. Summer Catering. During the summer, the Chef hires a seasonal Banquet & Prep Chef to oversee the catering preparation and execution with the support of a seasonal Prep & Catering Cook while you focus on the Field Kitchen Dinners. With that said we are all a team and we all help each other. Team Work. Work side by side with FOH Manager/Events Manager. Summer Farm BBQ Responsibilities. From June through September, we throw one heck of a barbeque party. You will be responsible for the quality of the barbeque proteins and preparation. Smoking the brisket very early the following morning and monitoring the smoker to ensure optimal brisket tenderness. 4:30am arrival onsite. Brisket needs to start at 5:00am. Smoking the other proteins the day of, ensuring perfect results. Overseeing the preparation of the sides following the recipes, including potato salad, cornbread, and beans.Once the stage is set, you clock out as you have already had a long day. You can hang around to watch folks enjoy the fruits of your labor or head to an early bedtime. Either way, you are the one who makes it happen and you get all of the credit. Before you clock out you must check in with the Restaurant team about dishes, cleaning duties and making sure they feel successful for the rest of the day/evening. Food Safety. You will be responsible for maintaining a positive relationship with the health department by meeting or exceeding all requirements. Ensure that all prepared foods are properly labeled and dated and stored. Adhere to food, health and safety standards so as to ensure that the facility is continually held in high regard by the Health Department. Ensure compliance with operational standards, company policies, federal/state/local laws, and ordinances. Other ResponsibilitiesBodhi Zero Food Waste Program. Support our sustainable waste program by always disposing of food waste in the proper containers, recycling, and using disposable supplies frugally. Dress Code. Ensure that you adhere to the dress code standards. We are an outdoor business and this has its physical requirements. If you’re looking for a desk job, you’re in the wrong place. Withstanding temperatures of 0 degrees to 100 degrees Fahrenheit.Moving constantly for extended periods of time (up to 10-12 hours a day).Lifting and carrying items weighing up to 75 lbs. for distances of up to 25 ft.
