Food & Beverage Director/Multi-PropertySalary range depending on experienceJOB SUMMARYThe Food & Beverage Director is responsible for overseeing restaurant operations at multiple G PEG casinos to maintain standards of excellence in quality and service while maximizing profits.All employees are expected to conduct themselves in a manner which demonstrates friendliness, initiative, professionalism, personal awareness and integrity while exercising confidentiality in the appropriate areas of their performance.RESPONSIBILITIESPromote positive guest relations by projecting a courteous, helpful attitude and assisting guests and employees throughout the restaurants and casinosEnsure smooth daily operations across the organization with a focus on efficiency, quality, cleanliness, safety and service standardsManage annual F&B budgets, forecasts and P&L performanceMonitor labor and expenses to assist with implementing controls and identify opportunities for revenue growth and cost savings across all outletsAssist with managing staff including scheduling, hiring, training, coaching, reviewing performance, documenting and rewardingEnsure proper staffing levels, labor control and operational efficiency at each propertyDevelop training plans and assist department supervisors with ensuring staff are properly trained to increase and maintain competency levelsAssist with ensuring proper portioning, presentation and consistency of menu items through training and inspectionFoster a culture of accountability, communication and collaborationEstablish clear expectations and performance standardsEnsure seamless coordination between front-of-house and back-of-house teamsSupport employee engagement, retention and leadership developmentSolicit customer feedback, address issues and follow up to improve service and ensure guest satisfactionAssist with overseeing inventory controls, procurement and vendor relationshipsFill in where needed to ensure guest service standards and efficient operationsFully understand and assist in compliance with all federal, state and county regulations that pertain to health, safety, labor and gaming requirementsMust ensure compliance with verbal and written directions, policies, and procedures and assist with administering prompt, fair and consistent corrective action for any violationsRegularly provide information to Operations leadership regarding guest and employee feedback, problems that may arise and any safety concerns throughout the property to ensure a quality and safe environmentShow willingness and effort to work as a teamPerform other duties as assignedQUALIFICATIONSMust be at least 21 years of ageLeadership experience required with specific knowledge of all phases of restaurant operationsDemonstrated ability to lead large teams and manage multi-outlet operationsStrong financial acumen and experience managing budgetsProficiency with computer systems, communication platforms and reservation tools required; experience with InfoGenesis POS preferredKnowledge of proper service techniquesMust possess excellent communication and organizational skillsMust pay attention to detail including cleanliness and safetyProfessional demeanor, positive attitude and excellent people skills with ability to courteously and efficiently interact with guests and lead a teamAbility to communicate effectively and listen attentivelyAbility to multitask in a high-volume environment while maintaining service standardsAbility to bend, stand, walk and exert well-paced mobility during entire shiftAbility to lift up 25lbs on a regular basis and up to 75lbs occasionallyAbility to work in a noisy, smoking casino environmentFlexibility required to work varied shifts, including weekends and holidaysCERTIFICATIONSServSafe Food Protection ManagerAlcohol Awareness Training
