In this role, you will be responsible for preparing high-quality seafood products by filleting, cutting, and portioning fish according to company standards. You will work in a fast-paced, temperature-controlled environment alongside a team that is committed to quality, safety, and efficiency. This position is ideal for someone who takes pride in craftsmanship, pays close attention to detail, and thrives in hands-on work.What You'll DoFillet, cut, and process whole fish into fillets and portioned cuts, with a focus on groundfish and salmonAssess seafood quality based on shape, texture, and smell to ensure only top-quality product is processedUse knives, sharpening tools, and processing equipment safely and efficientlyMaintain consistent product specifications in line with company standardsKeep the cut room clean, organized, and free of debris or hazardsFollow all food safety and sanitation procedures, including proper handwashing and equipment cleaningAdhere to FDA and company guidelines for seafood processing and productionComply with all safety protocols, company policies, and operational proceduresAssist with additional tasks as assigned by supervisorsQualificationsProven experience in fish cutting, filleting, and seafood processingStrong knowledge of seafood quality standards and handling practicesSkilled in the use and maintenance of knives and cutting equipmentAbility to work efficiently in a physically demanding role, including standing for long periods and performing repetitive tasksCapable of lifting and carrying up to 50 lbsComfortable working in a cold, wet environment (35°F–40°F)Flexible availability, including early mornings and weekendsStrong attention to detail and commitment to qualityReliable, safety-conscious, and able to follow strict procedures and guidelines
