ABOUT THE OPPORTUNITY We are seeking a visionary Head Baker to lead our brand-new French bakery & café. This is a unique opportunity to take ownership of an established bread and pastry program while having the creative freedom to design and launch your own signature items. You will work in a stunning, modern kitchen fully equipped with premium, brand-new Pavailler ovens and high-end tools. KEY RESPONSIBILITIES Production leadership: Oversee and manage the daily production of all breads, viennoiseries and pastries Menu innovation: Expand our current program by developing new, creative recipes and seasonal signature items Quality excellence: Ensure the highest standards for visual presentation, flavor and texture across all products Team management: Train, mentor and schedule the baking team, fostering a collaborative and professional environment Operational oversight: Manage inventory, ingredient sourcing and waste control to ensure profitability Equipment mastery: Operate and maintain state-of-the-art Pavailler deck and convection ovens to achieve artisanal results REQUIREMENTS Proven experience as a Head Baker or Lead Baker in a high-quality artisanal bakery Deep expertise in baking techniques (sourdough, laminated doughs) Strong leadership skills and experience managing a production team A creative mindset with a passion for traditional techniques and modern innovation Reliable, organized and committed to excellence WHAT WE OFFER Competitive annual salary based on experience A creative leadership role with the power to shape our culinary identity Working with world-class, brand-new equipment (Pavailler) More detail about Fred's Bread Bakery & Café, please visit
