North Star Fishing Company is hiring a Head Cook to work aboard the F/T North Star, an at-sea processing vessel that fishes off the Coast of Alaska. The Head Cook is responsible for safe and efficient management of the Galley to include all meals, cleanliness and maintenance of ship accommodations, training and supervision of galley staff.
Requirements
Standing 12 hrs/day for 7 days/week
ServSafe Food Manager certification or ability to obtain one
Self-starter who is motivated and able to meet operation deadlines
All candidates subject to a post offer pre-employment drug test, medical and background screen.
Must be able to provide two positive recent references from previous employers
Duties
Prepare well balanced, family style meals for crew of 72
Supervise, motivate, train and evaluate the work activities of the assistant cooks and housekeepers.
Responsible for establishing and managing Galley staff schedule/rotations
Ensure all common areas, staterooms, toilets and other areas are cleaned and maintained to satisfaction of the vessel Captain.
Provide timely requisitions for all provisions, equipment and other galley and hotel supplies
Maintain cost controls as stipulated by GFC/NSF Operations. Track total food cost, voyage days and food cost per crew, per day.
Manage food budget within assigned guidelines by working closely with GFC/NSF Operations and food vendors.
Provide GFC/NSF Port Engineer and vessel Chief Engineer a work list for all Hotel maintenance/repair needs on a trip by trip basis during fishing and at end seasons.
Provide regular inventory reports to GFC/NSF Operations and Accounting departments
Ensure compliance with applicable sections of the Safety Management System. Knowledgeable and conversant on applicable policies and procedures contained in the SMS.
Ensure compliance with environmental and company regulations regarding general and food waste.
Maintain galley/hotel food and hygiene in compliance with ADEC standards.
Qualifications
Culinary Certification or degree preferred
Experience on fishing vessel, cruise ship or hotel preferred
Knowledge of reading and preparing recipes for 75+ people
Basic understanding of the various laws and regulations and how/when they may apply
Basic math skills including addition, subtraction, multiplication, division and percentages
Excellent communication skills, written and spoken English
Strong leadership and management skills
Benefits
Company travel policy agreement: Successful completion of 5 consecutive fishing trips grants eligibility for airfare/hotel expenses, between the vessel and Seattle, to be paid by the company. Each fishing trip averages 12-16 days and can be more or less dependent on fishing conditions.

Crew paid a share of the catch each fishing trip. Average crew share per trip is $8,250 -$9,550 depending on the value of the catch.
