Job SummaryWe are looking for an experienced Sous Chef to assist our Chef in all aspects of kitchen operations. Communication and teamwork is key. A strong line leader who works best under pressure will thrive.Daily DutiesLead the kitchen line preparing a variety of foods, quantities, styles, according to the menuUse proper knife skills, cooking techniques, cooking methods and terminologyRead, understand and follow standardized recipes when preparing all foodsUnderstand and follow through with all assigned tasksClearly communicate with Front of House SupervisorsMaintain and communicate with the chef for the food and products needed to ensure safe par levels and proper stock levelsMaintain a clean, organized and sanitized work area all while following all tribal, city, state and federal health/food safety regulations and codesEnsure all areas of the kitchen are taken care of and all assigned duties are completedResponsible for all food/storage areas (refrigeration, freezer, dry storage) are kept clean, organized, labeled and datedResponsible for all equipment, tools, floors, work stations and food prep areas are kept clean and organizedContribute to a team effort accomplishing all tasksPerforms other duties as requiredBe able to work and train on all stationsStepping in as the primary leader in the executive chef's absence.Requirements & QualificationsAbility to bend, push, pull and lift 50 poundsAbility to stand and walk for hours at a timeHigh school degree or GED requiredThree years of recent experience as a cook or as a kitchen attendant; or equivalent combination of recent experience and educationMust be at least 21 years of ageBenefitsHousing is available!Lafayette Hotels is an affirmative action and equal opportunity employer.
