This position reports directly to Bobby, our Pitmaster, and is responsible for maintaining the daily operations of our wood-fired pit (J&R Oyler). *Responsibilities:* * Assist the Pit Master with heavy daily meat preparation, including trimming and seasoning briskets, ribs, and pork shoulders according to exact brand specifications. * Load, unload, and monitor commercial wood-fired pits, ensuring consistent temperatures and smoke profiles. * Manage wood inventory, including moving, stacking, and organizing cords of post oak splits. * Execute strict deep-cleaning protocols for pits, grease traps, smokehouse floors, and cutting blocks. *Requirements:* * 1+ years of experience working with live fire, commercial smokers, or heavy-volume butchery/kitchen operations preferred, but we will train the right candidate. * *Physical Capability:* High physical stamina. Must be able to lift, push, and carry up to 75 lbs consistently throughout an 8-to-12 hour shift. * Ability to work under high-heat conditions and tolerate heavy smoke environments. * Absolute punctuality and reliability; scheduling leaves zero margin for lateness.
