Head Brewer | Sixpoint Brewery - Brooklyn, NYCompensation Target: 75k The Head Brewer is responsible for brewing top quality and consistent beer in the safest and most efficient manner possible. The position is responsible for moving brands forward from inception, through development, and into final production. They will coordinate with brewery leadership on the creation and execution of beer concepts, ideas, and recipes. They will be responsible for all aspects of brewing such as ingredient purchasing, planning and execution of brewing functions, leading process improvement efforts, and ensuring safe and sanitary working conditions. The Head Brewer is expected to be competent in executing wort production, active fermentations, dry hopping, conditioning beer, lab monitoring and packaging tasks when necessary. WHAT YOU'LL DOLead new product development with recipe formulation and innovative techniques to create new and exciting flavor experiences while coordinating with the management team to adhere to TTB labelling guidelines and product launch time frames. Manage and plan brew schedule, document and regularly communicate schedule to taproom, marketing, and sales departments. Capable of performing all brew house, cellar, CIP, QC, and Packaging duties. Coordinate purchasing and inspection of raw material ingredients; ensure inventory is on hand for brew days and recipe/brewing transaction are recorded in ERP system. Author new and edit existing SOPs. Manage brewing logs and beer record keeping files. Completion and submittal of quarterly TTB reports. Manage development, planning, and execution of site pilot brewing program. Provide constant communication on performance and focused objectives and goals to manager and inside the brewery. Supervise the Sixpoint Brewers Lead by example and set a Safety First culture by always wearing PPE, following LOTO procedures, and looking out for the well-being of the staff with identification and correct hazards and environmental concerns in a timely manner. Ensure the facility is regularly cleaned and always in tour ready condition. Maintain brewing areas to ensure compliance with company quality, sanitation and safety standards. Maintain and keep the brewing facility in working order, which includes having equipment serviced regularly by a professional, or brewing staff. Oversee in-house and external tours and brewer events with staff ensuring we represent the brewery well at each occasion. Provide tours that convey the brewers' passion, convey the distinctions of our brewery in the craft industry, and adjust content to the audience. Be the primary point of contact for our brewery material suppliers, and mediate any quality and supply issues. Performs other related duties as assigned by management. Quality Finished Beer Production and Process Improvement: Quality finished beer production is ultimately the most important part of this job. Our beer is consistent, free from defects, true to style and of the highest quality. Maintain an adequate supply of malt, hops, yeast, packaging, and other brewery supplies to keep up with production. Qualify new suppliers and keep records of supplier issues and performance. Track and analyze performance on a daily basis to identify gaps and opportunities to continuously improve the quality, consistency, and cost of our products. WHO WE'RE LOOKING FORBachelor's Degree in a related technical field required (Science or Engineering preferred) and/or a formal brewing education from an accredited brewing program (Siebel, UC Davis) or professional brewing experience. 3-5 years of experience in a Craft Brewery (10+ barrel brew house, barrel aging, sour production, pilot brewing, keg/can/bottle packaging, brewery installation a plus). Availability for full time, Monday-Friday, day shifts with flexibility to manage deliveries and pick ups. Occasional evening and weekend support required for Taproom Events at the Sixpoint Taproom in Manhattan - Sixpoint Brewery at Brookfield Place. Possess and maintain proficient understanding of Laboratory Operations / Quality Assurance / Sensory Trained to measure cell health, pitch rates, ABV analysis, BU analysis, taste and color analysis. Possess basic mechanical skills - manage maintenance program - coordinate spare parts inventory, preventative maintenance schedule and serve as first line of troubleshooting/problem solving. Planning and scheduling of production to meet packaging, shipping, and new product launch objectives. Experience in successfully creating beer recipes. Budgeting and ability to set priorities to work within well-defined financial targets and guidelines. Knowledge of brewing and packaging equipment as well as steam, chilled water, and compressed gas utilities. Software (Office 365, ERP). Must have current or be able to obtain Fork Lift Operator Certification. Strong customer orientation. Passion for people and beer. Physical RequirementsFrequently stand for the duration of the shift, walk, bend over, twist, kneel, climb, stoop and crouch. This position requires the ability to routinely and repeatedly lift up to 55 pounds and maneuver 170 pounds repeatedly. Use their hands to perform fine manipulation, handle or feel, and must be able to reach with hands and arms. Identify product deficiencies (color, smell, taste). This requires having close, distance, color and peripheral vision as well as depth perception and the ability to adjust focus. This position requires proper handling of hazardous materials and operation of complex moving machinery. Regularly exposed to a damp, wet environment with hot liquids, airborne particles, chemicals, and moving machinery. Must be able to travel via car, airplane or train.
