Bakery Assistant General Manager

The Bakery Assistant General Manager serves as a critical operational leader within the bakery, helping ensure every product reflects Tatte's commitment to craft, consistency, and excellence. The Bakery AGM is the operational second-in-command to the Bakery General Manager and plays a hands-on leadership role in daily production execution, team leadership, food safety, and operational performance. This role oversees production supervisors and bakery teams across multiple departments, ensuring production goals, quality standards, staffing plans, and operational priorities are executed effectively and consistently. The Bakery AGM helps translate strategy into execution, balancing people leadership, operational discipline, and continuous improvement to support a high-performing, scalable bakery operation. This leader is deeply engaged on the floor, coaching teams, solving operational challenges, and reinforcing a culture of accountability, collaboration, and craftsmanship.KEY RESPONSIBILITIESLead Daily Bakery OperationsOversee day-to-day production operations across bakery departments to ensure timely, accurate, and efficient execution of production plansLead and coordinate production supervisors and shift leaders across multiple production areasEnsure production targets, labor plans, and operational priorities are achieved while maintaining product quality and consistencyServe as the operational leader in the absence of the Bakery GMMonitor workflow, staffing levels, and production schedules to proactively address operational bottlenecks or capacity constraintsPartner with the Bakery GM to improve operational systems, communication, and execution disciplineDrive Quality & Food Safety ExcellenceUphold Tatte's uncompromising standards for product quality, freshness, presentation, and consistencyEnsure all bakery operations adhere to DOT, GMP, HACCP, OSHA, FDA, and local health and safety regulationsConduct routine production, sanitation, and quality audits to reinforce standards and identify improvement opportunitiesPartner with production leaders to troubleshoot quality issues and implement sustainable corrective actionsReinforce a culture where food safety, cleanliness, and operational discipline are non-negotiableBuild, Coach & Develop TeamsLead, coach, and develop production supervisors and bakery team members through consistent feedback, accountability, and supportFoster a culture of learning, teamwork, craftsmanship, and continuous improvementSupport hiring, onboarding, training, and cross-training efforts in partnership with the People Team and Bakery GMHelp identify high-potential talent and support internal development pathways across bakery operationsConduct regular team check-ins, shift meetings, and operational huddles to maintain alignment and engagementSupport Operational Performance & Continuous ImprovementMonitor labor utilization, waste, production efficiency, and operational KPIs to support bakery performance goalsPartner with the Bakery GM on labor planning, staffing optimization, and operational improvement initiativesIdentify opportunities to improve throughput, workflow, communication, and operational consistencySupport implementation of Lean, continuous improvement, and operational excellence initiativesAssist with inventory management, product flow coordination, and operational readiness planningEnsure Operational Readiness & Leadership PresenceMaintain a strong floor presence and actively support teams during peak production periodsHelp coordinate production readiness for new product launches, seasonal volume increases, and market expansionRespond calmly and effectively to operational challenges, staffing issues, and production disruptionsReinforce Tatte's values and leadership expectations through daily actions and decision-makingQUALIFICATIONS AND EXPERIENCERequired4-7 years of leadership experience in bakery production, food manufacturing, or high-volume culinary operationsProven experience leading teams in fast-paced production environmentsStrong operational leadership skills with the ability to balance quality, efficiency, and people developmentWorking knowledge of food safety, sanitation, OSHA, and GMP standardsExperience with production scheduling, labor management, and operational planningStrong communication, coaching, and problem-solving skillsAbility to lead with urgency, accountability, and empathyExperience in bakery, pastry, or artisan food production strongly preferredBilingual (Spanish/English) a plusWorking ConditionsAbility to stand for extended periods of time and lift up to 50 lbsFlexibility to work varied schedules including early mornings, nights, weekends, and holidays as business needs requireMust be comfortable working in a fast-paced production environment with varying temperatures and production conditionsExpected to maintain strong operational floor presence throughout shiftsOUR BENEFITS & PERKSCompetitive pay - ranging from $95K-125K/year (depending on experience) and bonus potential of up to 10%401(k) (with a vesting match)Free employee assistance programsPaid vacation time and paid sick timeHealth, dental and vision insuranceGenerously discounted meals and free drinksExciting potential for growthPlease note that Tatte is an E-Verify employer.Equal Opportunity EmployerThis employer is required to notify all applicants of their rights pursuant to federal employment laws.
