Italian Chef
Position Summary
We are seeking an experienced Italian Fine Dining Chef to lead the culinary execution of an elevated, authentic Italian dining experience. This role is responsible for creating and executing seasonal menus, maintaining exceptional quality and consistency, managing kitchen operations, and leading a high performing culinary team with a strong focus on technique, presentation, and hospitality.
Key Responsibilities
Menu Development and Culinary Execution
Create and refine seasonal Italian fine dining menus featuring fresh, high quality ingredients
Execute classic and modern Italian cuisine with strong technique and attention to detail
Oversee daily mise en place, service execution, plating standards, and food presentation
Develop house made pastas, sauces, stocks, and signature dishes with consistency
Ensure all dishes meet fine dining standards for flavor, temperature, timing, and appearance
Kitchen Leadership and Team Management
Lead, train, and motivate kitchen staff to maintain excellence during service
Set clear expectations for prep, station organization, cleanliness, and teamwork
Manage scheduling, staffing needs, and performance coaching as needed
Maintain a calm, professional, and organized kitchen environment during high volume service
Food Quality, Safety, and Standards
Maintain strict food safety, sanitation, and health code compliance
Monitor ingredient handling, labeling, storage, and temperature logs
Maintain high standards for kitchen cleanliness, organization, and equipment care
Ensure consistency in portioning, recipe execution, and plating across all shifts
Inventory, Ordering, and Cost Control
Manage ordering, receiving, and inventory for all food products
Build strong relationships with local vendors and specialty Italian suppliers
Control food cost through proper portioning, waste reduction, and smart purchasing
Track usage and adjust ordering based on volume and seasonal availability
Guest Experience and Collaboration
Work closely with front of house leadership to ensure smooth service flow
Collaborate on wine pairings, specials, tasting menus, and private events
Maintain strong communication between kitchen and dining room teams
Support guest satisfaction by accommodating allergies and special requests when possible
Qualifications
5 plus years of professional cooking experience, with fine dining experience preferred
Strong knowledge of authentic Italian cuisine, regional dishes, and classical techniques
Proven ability to produce fresh pasta, sauces, and scratch made components
Experience leading a kitchen team and managing high standards under pressure
Knowledge of food safety regulations and kitchen sanitation best practices
Strong organizational skills and attention to detail
Reliable, professional, and passionate about hospitality and excellence
Preferred Skills and Experience
Experience with tasting menus, chef specials, and seasonal menu development
Background in Michelin level, upscale, or chef driven restaurants
Knowledge of Italian ingredients, imported products, and traditional preparations
Ability to manage food costs, inventory systems, and vendor relationships
Work Environment and Schedule
Evenings, weekends, and holidays required
Fast paced fine dining kitchen environment
Standing for extended periods, lifting up to 50 pounds, working near heat and sharp tools
