Inflight Catering Kitchen - Salad/Cold Plate Station Cook (VERY EARLY MORNINGS)

Job Summary The Inflight Catering Cold Plated Station employees are responsible for preparation of food and culinary quality based on established recipes and customer requests to fulfill catering orders. This station is most comparable to having worked salad station or in any cold plated environment for another catering company. Experience working as a pastry chef is a bonus. This station requires an ability to not only prepare orders as requested but with detail and concern for presentation as that is of extreme importance in this environment. Island Kitchen InFlight operates an inflight catering company that operates 24/7/365 in Naples, FL servicing crew and passenger meal orders out of Southwest Florida. The ideal candidate will be familiar with following a structured menu, creating exceptional presentation, and maintaining high standards in a fast-paced kitchen environment. We are open 365 days per year, but are highly seasonal. This shift BEGINS at 2:00AM/3:00AM daily in season and goes until 10:00AM/11:00AM. Out of season, we fluctuate the start time to be later in the morning as production does not need to begin as early but this REQUIRES an ability to report to work on-time and very early in the morning. Fluent English reading and speaking is required. Spanish is a plus. Job Description: Follow and assemble tickets as prepared via the spec book to ensure standards in operational efficiency and client expectations. Prepare and assemble cold food items including salads, fruit displays, pastry displays, tenderloin platters, crudites, etc. Ensure the pantry station is organized, clean, and stocked with necessary ingredients. Assist in managing inventory levels for pantry items. Collaborate with the kitchen team to ensure timely and efficient service. Adhere to food safety standards, sanitary kitchen guidelines, and regulations at all times. Qualifications: Proven experience working in a restaurant or culinary environment Demonstrated ability to take orders and follow through as well as direct and work well with others in a team-driven, fast-paced environment is essential. Must be enthusiastic, creative, and highly motivated to assist in food preparation and presentation. Previous experience in a high paced environment where you are comfortable with change. 3+ years relevant culinary experience. Island Kitchen has been catering private flights out of Nantucket airport since 2018. We quickly expanded these services to include the greater Naples, Florida, Palm Beach, Florida, and Miami, Florida to accommodate more of our clients—providing them with fresh, nutritious dining options during air travel.
