Knowledge of standards of food preparation, portion control and serving procedures, knowledge of record keeping procedures. Excellent communication skills. Computer skills. Exhibit leadership qualities and ability to work well with assistants, administrators, teachers, students and parents. Obtain a minimum of 10 hours annual training. Complete 150 hours of GaDOE Manager Pathway classes within first 5 years of employment to include ServSafe certification. ServSafe recertification is required every five years thereafter.Primary Function: To perform duties and responsibilities listed below to meet system goals in student achievement and growth, organizational effectiveness, and relationships and perceptions.Performance Responsibilities:Carry out the standards of the State and Federal School Nutrition Program relating to food preparation, sanitation and serving practices.Plan and supervise food preparation based on sound principles of nutrition, acceptability and cost control.Operate the total lunch program within a budget.Purchase food and supplies effectively through the use of the food Buying Guide, bid book and USDA deliveries. Check invoices against name brand, quantity, and bid price of items ordered.Train school nutrition assistants in work simplification techniques, use of standardized recipes, use and care of equipment, proper methods of food preparation, service and storage, and safety rules to be followed. Oversee and follow all Hazard Analysis Critical Control Procedures (HACCP) in kitchen daily and train staff to follow procedures.Follow and enforce all safety requirements and rules.Enforce the requirement of non-skid shoes for ALL nutrition employees.Work with nutrition assistants to establish goals consistent with system level goals and perform annual evaluation.Responsible for all equipment in kitchen and ensure it is clean and in proper working condition daily.Plan work schedule so employees are supervised at all times.Create a positive atmosphere among assistants and handle any personnel problem individually and/or in groups as needed.Ensure the accuracy of all money collected is posted to customer account and bank deposits made daily.Attend in-service manager and professional meetings.Responsible for executing and maintaining all records relating to the school nutrition operation (production books, cash sheets, inventories, meal and money record, purchasing and invoice records, employee records, monthly summary report, time sheets, job performance evaluation, free and reduced rosters, etc ).Develop a program with parents, teachers, students and principals to promote good public relations with all groups concerned in order to create an understanding of the school nutrition program.Create an atmosphere in the cafeteria which results in a high percentage of student and adult participation.Report all accidents and observe workers' health so that the public may be protected against disease.Work cooperatively with administrators and staff to insure quality of the educational program.Perform other duties as noted by manager or assigned by the nutrition director.Comply with current instructions regarding negative account balances.Evaluation Instrument:Performance of this job will be evaluated annually in accordance with provisions of the HCSS Board of Control's policy on Personnel Evaluations.
