Lead Cook

The Lead Cook is responsible for the production and preparation of food items per standardized recipes and procedures. The incumbent is responsible for kitchen operations in the absence of Food and Beverage kitchen management staff.We offer:100% paid medical, dental and vision, employer paid life insurance and AD&D for employees working 30+ hours/week (Option to buy-up if desired). Follows standardized recipes and special directed diet orders.Prepares soups, stocks and sauces; boils, braises and roasts food items per standardized recipes.Sautés, fries, grills, steams and bakes food items per standardized recipes.Ensures food textures comply with physician prescribed therapeutic diets. Plans and coordinates food production with meal serving hours so quality, temperature and appearance of food is preserved.Determines the amount and type of food and supplies required for daily menus.Obtains supplies from storage areas in time for meal production.Removes food from the serving lines.Provides proper handling and storage of raw and prepared foods.Ensures that stock levels of staple and non-staple food, supplies, equipment, etc. are maintained at adequate levels.Processes incoming food and supplies deliveries. Verifies delivered inventory forms and stores incoming food and supplies.Complies with established infection control and universal precaution policies and procedures when performing daily tasks. Ensures compliance by assigned staff.Directs daily or scheduled kitchen and equipment cleaning duties in accordance with established sanitation procedures.Assures that food storage areas are clean and properly arranged.Be sure that dietary personnel wear protective clothing/devices when performing tasks that involve the handling of infectious waste and/or blood/body fluids.Required Knowledge, Skills and Experience: High school graduate, GED or equivalent experience preferred.One year experience as a cook in hotel, restaurant, hospital or similar institution preferred.Experience in providing supervision for kitchen staff.Current food handlers’ card.Knowledge of kitchen equipment operations and maintenance. Knowledge of dietary procedures including therapeutic diet preparations.Understanding of nutrition and diet required.Ability to plan and organize work, set priorities and multi task.Ability to make independent decisions.Ability to interpret instructions, recipes, specifications, standards and physician dietary orders.Patience, tact, cheerful disposition, and enthusiasm.Ability to work in a team environment.Regular, dependable and reliable attendance.Effective English communications skills both verbal and written.All Emerald Heights employees must pass a criminal background check and other pre-employment requirements.
