CHEF DE CUISINEFull time - SalaryBenefit Position The Chef de Cuisine will oversee and manage the overall production, quality control, and operations in the kitchen. Responsibilities include organizing and directing the processes necessary to provide a clean, professional, high quality, and high-volume catering kitchen for Chowgirls and for hunger relief through Kitchen Coalition. This position balances food production, kitchen management, and administrative work.The Chef de Cuisine reports to the Executive Chef.FINANCIAL MANAGEMENTMaintain Chowgirls sustainability standards through purchasing and sourcing ingredients that reflect Chowgirls vision and valuesOrder appropriate products based on events and needsAssist with inventory yearlyUse tools in Total Party Planner to assist with production and orderingResearch, purchase, and oversee maintenance of kitchen equipmentFOOD HANDLING/PRODUCTIONPresent food in creative ways that meet or exceed Chowgirls standardsMaintain current Serv Safe CertificateEnsure MN health department food safety standards in all stages of prep, storage, and transportWork as a team with Owners to create and sustain the taste and quality of Chowgirls menuAssist with scalability for quality mass production during recipe developmentMaintain Chowgirls sustainability standardsEnsure all recipes are followed to ensure a consistent productMaintain walk-in, coolers, freezers, and dry storage cleanliness and organizationMaintain general systems of organization for kitchen, food, and equipmentWork with operations and bar managers to order other suppliesSTAFF MANAGEMENTManage kitchen staff, ensuring quality and consistency in performance Participate in hiring and disciplinary actions, documenting as necessary Serve as a champion of Chowgirls passport training programAssist in teaching and supporting kitchen trainersWork with Executive Chef and Training & Growth Manager to further develop online courses and in-person trainingsSchedule staff to fulfill all kitchen shifts and onsite ChefsOversee staff's execution of all food productionMaintain Chowgirls standard of serviceDelegate production of items to kitchen staff in a standard organized mannerINTERNAL ORGANIZATIONMaintain a general system of organization for kitchen staff, food, and equipmentEnsure consistency in recipe documentationMaintain a working knowledge of email communication, Google Workspace, and the ability to learn Total Party Planner, Nowsta, Wisk and other softwareCOMMUNICATIONProactively communicate work and personal schedule through SlackAttend and actively participate in all required company meetingsRespond to internal and external communications within 12 hoursPresent a professional positive attitude among coworkers, vendors, and clientsFacilitate information flows throughout workplaceMaintain availability for communication by phone, Slack, and emailHUMAN RESOURCESMaintain employee privacy at all timesBe aware of MN employment lawsKeep all Chowgirls information confidential, including internal documents, policies, procedures, recipes, and customer/venue/vendor informationMaintain general knowledge of Chowgirls handbook, history, values, and visionAlways promote Chowgirls in a positive light at the office, on social media, and in the communityCULTUREParticipate in Chowgirls training programsCultivate general knowledge of Chowgirls handbook, history, values, and visionGuide peers and Chowgirls forward by sharing identified strengths or skill areas of specializationCommit to professional development, building a broad portfolio of skills and increasing mastery of current skillsUphold Chowgirls' commitment to Diversity, Equity and Inclusion
