Prep Cook

Rooted in history yet thoughtfully evolved for the modern guest, The Heathman blends classic elegance with contemporary comfort in the heart of downtown Portland.The Prep Cook is responsible for preparing ingredients, maintaining kitchen organization, and supporting the culinary team in delivering high-quality food and exceptional guest experiences. This role ensures all food preparation is completed efficiently, safely, and according to established recipes and standards.Requested Tasks: Prepare ingredients including chopping vegetables, portioning meats, preparing sauces, and assembling basic recipesMaintain clean, organized, and fully stocked prep stationsFollow recipes, portion controls, and presentation specifications established by the culinary teamLabel, date, and properly store food items in accordance with food safety standardsAssist line cooks and chefs during service as neededReceive and organize deliveries while rotating inventory using FIFO methodsOperate standard kitchen equipment safely and efficientlyMaintain sanitation standards and comply with all health department regulationsAssist with cleaning duties including kitchen equipment, floors, storage areas, and workstationsSupport banquet, restaurant, and catering preparation needs when required Requested Capabilities: Previous prep cook or kitchen experience preferredBasic knife skills and understanding of food preparation techniquesKnowledge of food safety and sanitation practicesAbility to work efficiently in a fast-paced environmentStrong organizational skills and attention to detailAbility to follow instructions and work collaboratively with a teamFood Handler Certification preferred or required per local regulationsExperience in hotel, fine dining, or upscale casual restaurant environmentsUnderstanding of kitchen safety and sanitation proceduresTeam collaboration and strong communication skillsPassion for hospitality and culinary excellenceAbility to stand and walk for extended periods during scheduled shiftsAbility to frequently bend, stoop, reach, push, pull, and lift items up to 50 poundsAbility to safely operate kitchen equipment including ovens, grills, slicers, fryers, and knivesAs part of the Makeready collection, we proudly offer a variety of thoughtful benefits and perks for eligible team members including accommodating PTO, medical/dental/vision benefits, 401k and a wide range of additional ancillary benefits.
