Follows the resident care plan for nutritional meals according to the physician orders. Supervises the dietary personnel ensuring Federal/State regulatory compliance and adherence to center policies and procedures.Essential Functions:Reasonable accommodations may be made to enable individuals with disabilities to perform the essential functions.Recruits, interviews, hires, trains, coaches, evaluates, disciplines and, when necessary, terminates departmental employeesMaintains working knowledge of budgeting and working within its confinesMonitors labor management/control including staff schedulesUnderstands nutritional requirements for the resident population and menu options and availabilityInteracts with customers to ensure their satisfactionReviews and assures menus are served as written (regular and therapeutic) and substitutions per policy with Registered Dietitian (RD) approvalAssures that foods are prepared according to production schedules, menus, and standardized recipesCoordinate with RD to complete nutritional assessments on residents within required timeframesAttends Care Plan meetings per policy (as needed)Monitors weight gains/losses and communicates/coordinates any concerns with RD/Clinical teamAudits meal services to assure compliance with systems, policies and procedures, including, not limited to:o Mealtimes are posted and monitored for complianceo Planned menus, diets, and portion control are followedo Dining experience of residents is positive and hospitableo Staff are trained regularly on proper dining room serviceo Receiving/storage meets Center and regulatory standardsCompletes other audits as directed.In-services staff as indicated (Cooks meeting and all staff as needed)Ensures proper storage and handling of food in centerupon hire, annually, and as neededTemperature logs and cleanliness are maintained for all equipmentPersonal hygiene practices in placeFood safety and correct temperatures are maintaineddocumented per policy and CMS/state regulation. Completes training with all dietary staff upon hire and annuallyProtects food in all phases of preparation, holding, service, cooking, and transportation, using HACCP GuidelinesComplies with laws and regulations applicable to position and acts in accordance with Center's Compliance ProgramAttends and participates in in-service training, quality assurance/performance improvement ("QAPI") committees and other meetings as scheduled and directedSafetyo Knows and follows center ruleso Follows center dress and hygiene policieso Demonstrates proper use of equipment. Reports equipment needs or repairso Follows center smoking policieso Reports and documents any incidents or accidents of residents, staff, or visitors to the appropriate center personnelo Reports all hazardous conditions/equipment to Supervisoro Performs duties, which may include transportation of residents, as assigned in Center Disaster Plan§ Understands and maintains disaster plan for dietary department not limited to the followingMenu (including consistencies), water, disposables, and stockProtective equipmentNecessary equipmentCoordination with the department head teamo Uses required protective equipmento Follows infection control standards, policies and procedures* Resident Rightso Knows Resident Rights. Helps the residents/patients exercise and/or protect their rightso Reports resident/patient complaints to managemento Maintains confidentiality of resident/patient information* HIPAAo Follows and adheres to Center's policies and procedures implementing HIPAA requirements for the privacy and security of protected health informationo Uses and/or discloses only minimum amount of Protected Health Information necessary to complete assigned taskso Reports all suspected violation of company's HIPAA policies or procedures to Center Privacy DesigneeWork Environment/Physical RequirementsThe responsibilities of this position involve significant physical activities including standing, lifting (up to 50 pounds unassisted), bending, stooping, pushing, pulling and twisting.Required Education and ExperienceHigh School diploma (or equivalent)High volume food preparation experienceComputer proficiency with Microsoft productsMeets CMS /State regulation for education and experience required for this position at all timeso Refer to §483.60(a)(2) for requirementsPreferred Education and ExperienceExperience in a fast-paced environmentAssociates degree in related fieldExperience in industrial food production preferredPost-acute care or health care experience preferredSkills, Knowledge and Abilities: Ability to read, write, speak, and understand English. Ability to withstand sudden temperature changes from heat of the kitchen to the cold of the freezers. Ability to identify chemicals, and properly use and dilute them. Able to relate positively, effectively, and appropriately with residents/patients, families, community members, volunteers and other center staff. Possess special interest in, and a positive attitude about, working with long-term care residents/patients and the elderly. Meets all health requirements, as imposed by law. Ability to taste and smell food to determine quality and palatability. Ability to handle and manipulate equipment in supervising, demonstrating, and assisting in food preparation and serving.
