The cook is responsible for appropriate use of facility supplies and equipment to minimize loss.Duties and ResponsibilitiesPrepares and/or directs preparation of food served using established production procedures and systems as assigned by the Food Service Director.Determines & ensures availability of supplies & food or approved substitutions in adequate time for preparation. Correctly prepares all food served following standard recipes and special diet orders.Maintain HACCP logs and daily production recordsFollow safety regulations and precautions at all times, cleans and maintains equipment used in food preparation, observes proper food preparation and handling techniques.Follow Federal and State long term care regulations and Dietary Department policies and procedures.Knowledge of food handling, preparation and service.Knowledge of local and state health and sanitation and safety codes is beneficial.Basic understanding of kitchen cookware and appliances.Previous cooking experience recommended.ServSafe certified; and ServSafe Allergens certification recommended.
