Culinary Specialist
NATURE AND SCOPE:Supports new police officers’ basic training throughout their approximately 24-week residential academy (Mon-Fri). There are two separate classes a year, a spring class and a fall class. This position is responsible for planning and preparing meals for trainees throughout the week and for special events.PRINCIPAL ACCOUNTABILITIES:Planning:Strictly adhere to approved menu options and ordering guidelinesDocument all meal plans weekly for review by the Academy AdministrationLimit food wasteDocumentation and Communication:Maintain records of all purchases and submit to the Academy AdministrationKeep the Academy administration informed of needs and concerns arising in the kitchenAct as a point of contact with vendors and help facilitate food orderingBe able to direct and mentor members of the class who are assigned to assist in the kitchen with final food preparation, serving, and cleanupCulinary Skills:Adequately prepare and feed approximately 30-40 adults 3 meals a day that satisfy nutritional requirements similar to those of athletes in trainingOversee daily maintenance tasks in the kitchen to ensure appliances and serving areas are clean, functioning, and meet Department of Health standardsTeamwork:Be able to work in a small team environment with the understanding that all tasks directly impact the overall success of the officers throughout their Academy experienceKNOWLEDGE, SKILLS AND ABILITIES:Knowledge of food service principles, practices, processes, and techniques involved in food preparation activities.Knowledge of the materials, methods, and equipment used in large-volume food preparation.Knowledge of safety and sanitary procedures pertinent to cooking, food preparation, storage, equipment, and handling.Knowledge of recordkeeping.Knowledge of menu planning.Skill in the operation of kitchen equipment.Skill in cooking complete meals with a minimum of supervision.Ability to instruct recruits engaged in cooking and routine kitchen work.Ability to work from a menu in the preparation of meals.Ability to establish and maintain effective working relationships with recruits, vendors, State agency personnel, and subordinates.Ability to communicate effectively in oral and written form. MINIMUM QUALIFICATIONS:Possession of a high school diploma or equivalent.Six months’ experience in institutional/commercial cooking and baking. Six months’ experience in proper safety, storage and sanitation standards for food items. Possession of a valid driver’s license.CONDITIONS OF EMPLOYMENT: Direct deposit of paychecks is required as a condition of employment.
