Prep Cook (Sushi/Sashimi – Raw Fish Prep) Pay Starting pay: $18.70 per hour + tip sharing Pay rate may be adjusted based on experience and demonstrated skill level Compensation expectations will be discussed during the in-person interview Job Overview We are hiring a reliable and detail-oriented Prep Cook to support our sushi kitchen. This role is primarily responsible for preparing a limited variety of raw fish for sashimi and sushi, including portioning, slicing, and maintaining proper handling procedures. The ideal candidate has at least one year of experience in a Japanese restaurant kitchen working with raw fish, strong knife skills, and a strict commitment to food safety and cleanliness. Key Responsibilities Prepare a limited variety of raw fish for sashimi and sushi service, including portioning and slicing Maintain proper temperature control, storage practices, and freshness standards for raw seafood Follow established prep standards for cut size, weight, quality, and presentation Assist with daily prep such as rice support, garnishes, and basic ingredient prep as needed Keep prep stations clean, organized, and sanitized throughout the shift Label, date, rotate, and store seafood and ingredients using FIFO practices Monitor product quality and report spoilage, defects, or low inventory to the kitchen lead Clean and maintain knives, cutting boards, and prep tools following sanitation rules Follow all company policies and local health department regulations regarding raw food handling Work closely with sushi chefs and kitchen staff to ensure smooth service and timely preparation Qualifications / Experience Minimum 1 year of experience in a Japanese restaurant kitchen handling raw fish (required) Comfortable preparing raw fish for sashimi and sushi with consistency and speed Strong knife skills and attention to detail (portion control, clean cuts, presentation) Knowledge of proper raw seafood food safety standards (cross-contamination prevention, sanitizing, temperature control) Ability to work clean, organized, and efficiently in a fast-paced kitchen environment Dependable attendance and team-first attitude Physical Requirements Able to stand for extended periods and work in a cold prep environment Able to lift up to 40 lbs and perform repetitive cutting/prep tasks Job Types: Full-time, Part-time Pay: From $18.70 per hour Expected hours: No less than 30 per week Benefits: 401(k) Employee discount Work Location: In person
