Responsibilities: 1. Assures that required menu items are prepared in sufficient quantities to serve clients and staff 2. Assures that foods are cooked, held and served at temperatures appropriate to each item and in accordance with food safety guidelines 3. Serves foods in an appealing and appetizing manner 4. Serves foods according to the established serving schedule 5. Prepares portions or alternatives for modified diets as needed 6. Documents internal refrigeration, freezer and dry storage temperatures 7. Documents food cooking and holding temperatures for any foods considered hazardous 8. Stores all foods with label, date and time 9. Assures that dining and serving areas are kept clean and clutter-free during meal service times 10. Stores food products appropriately in dry, refrigerated or frozen areas 11. Assigns daily cleaning and prep duties to Community Service Workers 12. Keeps all food prep areas clean, sanitized and clutter-free 13. Recommends future food needs 14. observes current health codes and facility policies regarding dress, grooming and personal hygiene 15. Establishes a respectful but firm rapport with clients and CSWs to enforce departmental rules 16. Performs other duties as assigned Education and Experience: High school graduate or equivalent. A minimum of three (3) years experience in institutional food service is preferred. Must have a current Food Handlers permit or Managers certification. Knowledge and Skills: Knowledge of practices and problems of food protection, preparation and cooking techniques. Must be able to work with standardized recipes using standard weights and measures. Knowledge of standards of kitchen sanitation, personal hygiene and safety. Must be able to follow verbal and written instructions. A valid Oklahoma Drivers License is required. Understanding of alcohol/drug dependence and co-occurring disorders.
