Set up sanitizing bucket with rags every morning and noon time.1. Set up pot washing sink for washing, soaking, and sanitizing by 7:00a.m.2. Put floor mats out at proper stations.3. Pick up water pitchers and buckets from 3 floorsa. Wash pitchersb. Clean and put ice in buckets5. Return pitchers, ice buckets and 2 packages of 6 ounce cups to each floor.6. Make up coffees and water for tea.7. Take trucks with food to each floor. Double check correct floor by looking at slip on tray.8. If time permits, wash pots and pans between taking trucks to each floor.9. Approximately 9:15 a.m. breakfast break (10-15 minutes)10. Pick-up dirty cups from day room.11. Wash all plates, etc. arrive from various floors, wash all dishes and utensils.12. Clean out dishwasher after each mea.13. Hose down all working areas around dishwasher, clean down counter and floor.14. Add water to dishwasher.15. Throw away all garbage (check 3 barrels)16. Place thermal cups and plates on portable rack. Bowls, if used, on shelves,17. Brew coffee at 11:00 a.m.18. Lunch break (11:15-11:45 a.m.)19. Pour coffee at 12:00 noon20. Clean grill and slicing machine, if dirty21. When ready take food trucks to each floor (check tray for floor number)22. Change water in dishwasher.23. Wash remaining pots, pans and utensils.24. Sweep and scrub kitchen floor.25. Empty all garbage and change bags.26.
