Food & Beverage Director

Overview In this pivotal role, you will be responsible for overseeing all aspects of the Independent’s food and beverage planning and service. Your duties will Include menu planning and cost management, the preparation and presentation of food and beverages, as well as ensuring compliance with quality and safety standards. Additionally, the Food and Beverage Director supervises all areas of VIL and collaborates closely with the Marketing and Life Enrichment teams to identify potential event opportunities. Oversight of all food and beverage training is essential, including ensuring that employees meet training competencies. Furthermore, the Food and Beverage Director will provide support to the licensed campus as needed. Duties Oversee food and beverage operations by leveraging the expertise of divisional colleagues to deliver exceptional service to guests and residents. Coordinate replacements and backup plans for cooks, servers, and bartenders during call-ins, as well as for serving staff on the VIL campus. Develop and implement strategies to enhance pub revenue through creative initiatives, including entertainment and food/drink specials. Manage linen, produce, bread, Gordan's and housekeeping orders for VIL. Implement effective cost controls for food, beverages, and labor. Develop efficient systems for inventory management, receiving, and product utilization, while maintaining inventory control. Collaborate with the Licensed Campus Culinary Supervisor to procure necessary products for special events. Contribute to staff education and training by developing training programs and employing continuous improvement techniques; conduct monthly staff meetings. Adhere to safety and sanitation policies within work areas. Comply with all relevant licensing rules and food safety regulations. Experience Proven experience in hospitality management within the food service or restaurant industry. 2 years of experience in a culinary type of field and 1 year of management experience is required. Possess a ServSafe Managment Certificate. Strong knowledge of food production processes, food safety standards, and fine dining service protocols. Exceptional leadership skills with the ability to motivate teams in a fast-paced environment. Experience in shift management, ensuring smooth operations during peak hours. A background in bar operations is preferred but not mandatory.
