JOB SUMMARY:The Sous Chef is responsible for the successful operation of the kitchen in the Garden Restaurant, thus contributing to the overall success of Moody Gardens.POSITION AUTHORITY:The incumbent is authorized to take reasonable action necessary to carry out assigned duties and responsibilities, provided such action is consistent with position guidelines as outlined below.POSITION GUIDELINES:Position guidelines include, but are not limited to, established company and department policies and procedures and all supervisory directives. The incumbent is expected to exercise sound, reasonable judgment and initiative, and give high priority to accuracy and details in the performance of job responsibilities.ESSENTIAL FUNCTIONS:Coordinate all food production needs and food presentation operations of the Garden RestaurantEnsure the production of high quality food for the Garden Restaurant as well as all other food outlets of Moody GardensMaintain a high quality image through effective housekeeping, maintenance and sanitation in areas of responsibilityMaintain and evaluate existing food concepts and development of creative new food concepts which insure the highest quality food and profitabilityOperate within the budgeted guidelines, maintaining food cost percentagesResponsible for all equipment and inventory controlTrain new employees as well as coordinate internal training and developmental programs when appropriateImplement and support control procedures with the departmentCoordinate food production and presentation with other Moody Gardens management (such as Catering Manager and Restaurant Manager) when appropriateSchedule kitchen staff to meet kitchen responsibilitiesEnsure good safety practices of kitchen employees and assist in the maintenance of proper emergency and security proceduresAssist Executive Chef with all kitchen operationsEstimate daily production needs on a weekly basis communicate production needs to kitchen personnel dailySupervise and coordinate activities of cooks and workers engaged in food preparationOperate in compliance with all Local, State and Federal laws and governmental regulationsAny other duties as assigned; duties are subject to change as management deems necessary to best serve the needs of Moody GardensEDUCATION/ EXPERIENCE REQUIREMENTS:Bachelor's Degree in related field or equivalent experienceAbility to obtain any government required licenses or certificatesCPR certification or First Aid training preferredMust obtain TABC & Food handlers Certification before beginning workREQUIRED SKILLS:Must be reliable and responsibleAbility to speak Spanish preferredGood working knowledge of accepted standards of sanitationBasic mathematical skills necessary to understand recipes, measurements, requisition amounts, and portion sizesAbility to operate kitchen equipment such as stoves, ovens, kettles, mixers, and other kitchen equipmentPHYSICAL REQUIREMENTS:Ability to grasp, lift, carry, or otherwise move or push goods on a hand cart weighing a maximum of 200 pounds at a time at a continuous scheduleAbility to perform duties in confined spacesAbility to perform duties within extreme temperature rangesFinger/hand dexterity to operate food machinery
