Job Description Head Chef Pulaski, New York About Us Divots Restaurant and Bar is a full-service restaurant and bar located on at Streamside RV Park and Golf Course in Pulaski, New York, serving a loyal, long-standing community of guests who expect good food, a cold drink, and a kitchen that delivers consistently. Our guests include golfers, locals, and regulars who've been walking through our doors for years. We're also home to an RV park, which means we serve a diverse, seasonal crowd that values comfort food done right. We're looking for a Head Chef who takes craft seriously, leads with authority, and can run a tight kitchen without needing a big-city stage to prove it. Position Overview This is an hourly position. The Head Chef is responsible for the full operation of the kitchen from menu development and food quality to staffing, cost control, and daily execution. You report directly to the Administrator and are expected to lead, not just cook. Core Responsibilities Culinary & Menu * Develop and maintain a menu that fits our concept: approachable, well-executed, and profitable * Design recipes, set presentation standards, and enforce consistent food quality across every shift * Plan use of leftovers and seasonal inventory to minimize waste * Assist with planning and preparation for special events, banquets, and private parties * Collaborate with golf leagues and tournaments on banquet menus with support from administrators Kitchen Operations * Oversee daily kitchen flow and ensure meals are ready on time and to standard * Interview vendors, source and purchase food and supplies in line with approved menus and budgets * Receive and inspect incoming deliveries; direct proper storage * Maintain inventory systems and routinely audit stock levels * Implement and enforce kitchen policies and standard operating procedures Staff Leadership * Recruit, train, schedule, and supervise in a co-leadership role with dining room manager all kitchen personnel * Assign duties, evaluate performance, and hold staff accountable to standards * Run pre-shift meetings and maintain a culture of professionalism and morale * Resolve customer complaints quickly and effectively Financial Management * Assist with budgeting and monitor menu profitability * Track and control food costs and departmental expenses * Maintain cost records and flag variances to the Administrator Food Safety & Sanitation * Enforce strict adherence to food safety regulations and health code standards at all times * Direct and assist with kitchen cleaning beyond what Housekeeping covers * Maintain established institutional policies and procedures Communication & Collaboration * Periodically engage with guests to gather feedback on food quality, temperature, and presentation * Use that feedback to make operational improvements * Participate in department head meetings and in-service sessions as needed * Carry out additional duties as directed by the Administrator Work Environment This is a physically demanding role. Expect long hours on your feet in an active kitchen. Nights, weekends, and holidays are part of the job. Shifts may exceed 8 hours or 40 hours per week depending on business needs. This is not a desk job — it's a hands-on leadership role in a real working kitchen. What We're Looking For * Experience: Minimum 2 years of culinary experience with demonstrated kitchen leadership; restaurant and bar experience preferred * Education: Culinary degree or equivalent professional training (comparable experience considered) * Skills: Strong leadership, clear communication, sharp organizational ability, and sound financial judgment * Work Ethic: Someone who leads by example, earns respect on the line, and takes ownership of outcomes * Character: Low ego, high standards.
