Sous Chef About Half Shell Half Shell is a new raw bar and seafood concept from Jeff Van Dyke, founding partner of Brixx Wood Fired Pizza and Boardwalk Billy’s Raw Bar & Ribs. Located in the heart of South End—right on the light rail in the base of the new Linea building—Half Shell is an upscale oyster bar featuring oysters sourced from around the world, along with a menu of crudo, ceviche, lobster rolls, mussels, fresh fish, Ahi tuna burgers, po’ boys, and more. Our beverage program is anchored by timeless cocktails crafted with precision and a curated wine list with a strong focus on Champagne and sparkling wines. We are looking for a talented and driven chef to help lead our kitchen at Half Shell. This unique opportunity to make your mark on an elevated dining concept with strong vision and backing soon to become Charlotte's premier raw bar and seafood destination. Ultimately, we’re seeking a long-term addition to our leadership team—someone who takes pride in building systems, mentoring cooks, and helping set the standard for a great kitchen culture.
