Job Duties:
Fryer Management:
Conduct fryer safety procedures, including cold starting and filter maintenance.
Set fryer temperatures (330°F for chicken and fish, 350°F for side fryers).
Marination Process:
Prepare marination by mixing marination mix, salt, water, and ice in designated tubs.
Schedule draining and completion times for marination.
Fryer Designation for Food Safety:
Manage specific fryer duties, including load quantities, cook times, and stirring intervals.
Filter Maintenance:
Sift flour before and after every load of chicken and after every two tenders.
Change filters every two loads for fryer and grease maintenance.
Grease and Side Fryer Management:
Change side fryers after lunch and dinner rushes.
Product Marination:
Marinate tenders, chicken, livers/gizzards, and fish following specific procedures.
Batter Process:
Prepare batter by adding batter mix and cold water to the batter pan.
Monitor and change batter as needed.
