Position Summary
The General Manager is the operational leader of Freshies Woodfired Pizza’s mobile kitchen. This role is responsible for delivering an exceptional, artisanal wood-fired culinary experience while ensuring seamless daily operations, strong team leadership, and continued brand growth through events and partnerships.
The ideal candidate thrives in high-energy environments, leads from the front, and brings both operational discipline and creative passion to the food truck experience.
Key Responsibilities
1. Operations & Logistics
Oversee the full daily truck lifecycle: inventory management, food prep, loading/unloading, driving, and on-site setup/breakdown.
Monitor and maintain the wood-fired oven, including temperature control, wood sourcing, and cleaning.
Ensure compliance with all local health, food safety, and operational regulations at every service location.
Maintain quality control standards for food execution, cleanliness, and guest experience.
2. Team Leadership
Recruit, hire, train, and schedule a high-performing, high-energy crew.
Lead by example—working the line during peak service and fostering a positive, team-first culture.
Conduct performance evaluations and provide ongoing coaching and development.
Manage labor costs and staffing efficiency to meet financial targets.
3. Growth & Event Management
Execute the event calendar, including festivals, brewery partnerships, and private catering events.
Serve as the primary on-site point of contact for event organizers and clients.
Analyze weekly sales data and performance metrics to optimize menu offerings and location strategy.
Support local partnerships and community engagement initiatives to grow brand visibility.
Qualifications
Required
2+ years of management experience in the food service or hospitality industry.
Valid driver’s license with a clean driving record.
Ability to lift up to 50 lbs (wood and supplies).
Ability to stand for extended periods in a high-heat environment.
ServSafe Manager Certification (or ability to obtain upon hire).
Preferred
Food truck operations experience.
Knowledge of wood-fired cooking techniques or dough preparation.
Experience managing mobile or event-based food service operations.
