Pitmaster Apprentice
Job Summary
Embark on an exciting culinary journey as a Pitmaster Apprentice at Smokesmith Bar-B-Que. This paid, long term, career focused apprenticeship offers hands on training under experienced pitmasters in smoking, grilling, meat preparation, sausage making, and traditional pit room techniques. You will prep and trim meats, run and monitor smokers, cook and finish proteins, and help maintain staging areas and equipment. Schedule includes early mornings or late evenings and weekends. We want someone extremely reliable with goals in barbecue or restaurants who is eager to learn and grow into a pitmaster role
Key responsibilities
Prep, trim, portion, and season proteins for service
Operate and tend smokers, manage fire and temperatures, and keep cook logs
Cook and finish proteins to order and portion consistently
Make sausage following recipes and processes
Maintain staging areas and equipment, assist with basic smoker maintenance
Follow food safety, sanitation, and inventory procedures
Learn pitmaster skills through on the job training and take on more responsibility over time
Who we want
Extremely reliable with goals in barbecue or restaurants
Comfortable with physical work, early mornings or late evenings, and weekend shifts
Detail oriented about temps, timing, and food safety
Team first attitude and eager to learn from the pitmaster
Kitchen, butcher, or smoker experience helpful but not required
Reliability, Punctuality, and Flexibility required.
Pay: $14.00 - $20.00 per hour
