Ambition Prep seeks an experienced Child Nutrition Manager who will be responsible for performing a variety of job functions essential to the successful operation of the school cafeteria. Job functions include food production; meal service; food acceptability; customer service; sanitation, safety, and security; receiving, storage, and inventory; program regulations and accountability; equipment use and care; professional excellence. The School Nutrition Program provides an environment that supports healthy food habits while maintaining program integrity and customer satisfaction.Responsibilities And DutiesReports to work on time, in proper uniform, ready to workCoordinates ordering of foods, supplies, chemicals, produce, direct delivery itemsEnsures perpetual, daily, and monthly inventory of foods, supplies, and chemicalsEnsures keeping storerooms and walk-ins in order and proper supply levelsWorks with various software applications, entering and retrieving data as needed and grocery ordersEnsures of daily deposits in accurate method, and with change fund for registersDemonstrates a working knowledge and assures compliance of the USDA regulations, nutrition standards, culinary standards, food sanitation standards, and workplace safety standardsCoordinates the completion of all necessary paperwork, such as accident reports, negative balance letters, employee counseling forms, daily sales and meal count, production records, inventory, food safety, and workplace safety sheetsAssist with the coordination of menus and analysisAssigns and determines employee daily work schedules and duty assignments.Ensures processing (pre-approving) and assimilating free and reduced meal applications.Ensures the kitchen and dining facilities are cleanEnsures batch cooking and the freshest and highest quality of food production occursTrain food service of employees with support of supervisorLead team meetings and problem solving with staffHelps where needed when his/her duties are completedPerforms other duties assigned by supervisor or administrator.Meal ServiceEnsures the up of the serving line and breakfast carts (where applicable) each day, ensuringEnsures all items on the menu are placed on the serving line/breakfast carts in the proper order, in the proper amounts, at the proper temperatures, and on timeEnsures correct serving utensils are in place and that condiments and cutlery are providedUses serving utensils correctly to ensure correct portions are servedUnderstands what constitutes a reimbursable meal under Offer Versus Serve (OVS) and ensures that OVS is properly implemented for both breakfast and lunchServes students quickly and efficiently to adhere to the school’s meal schedulesCoordinate the preparation and serving of meals to the highest quality that encourages student consumption and participation in the school breakfast and lunch programsProvides outstanding customer service to students, parents, staff, visitors, and fellow employeesSanitation, Safety & SecurityFollows all local health department requirements for food safetyMonitors the temperatures of freezers, refrigerators, and milk coolers daily recording temperatures on the appropriate log and notifies food service coordinator if temperatures are above 10˚F (freezer) or 41˚F (refrigerator/cooler)Takes and records the temperature of foods to ensure that foods are cooked to the proper internal temperature, chilled to the appropriate temperature, and placed on the serving line at the appropriate temperaturePerforms general cleaning tasks and follows cleaning scheduleFollows the wash, rinse and sanitize procedures for ware washingAssists the food service coordinator in ensuring the security of all food and suppliesReceiving, Storage and InventoryCoordinates the receiving all incoming food and supply deliveriesEnsures stocking of all incoming deliveries and adheres to established food storage proceduresProgram Regulations & AccountabilityMaintains integrity and accountability of the School Nutrition Program through compliance with all federal, state, and local regulationsEnsures students receive all required meal components and that all meals served to meet the reimbursable meal requirementsEnsures students are served all required meal components, ensuring students are served reimbursable mealsAssists food service coordinator in maintaining all records and reports to meet local, state, and USDA requirements, including daily production records, temperature logs, etc.Complies with school mission and visionEnsures all USDA and state child nutrition guidelines are implementedEnsure redbook and documentation is accurate and up to dateEquipment Use & CareOperates and maintains commercial kitchen equipment (convection oven, tilt skillet, steamer, multi-compartment sink, etc.) in a safe and sanitary mannerFollows policies for the use and care of all equipmentReports any malfunctioning equipment to food service coordinatorCommunicates effectively with supervisor, school administrators, vendors, and fellow employeesDesired And Required ExperienceHigh school graduate or equivalentPrevious volume-feeding experience in an institutional, restaurant or educational environment (school cafeteria experience preferred)Knowledge involving food preparation, general cooking, food storage, cleaning procedures and meal teamAbility to provide friendly and outstanding customer service to students and othersPhysical CapabilitiesThis is a physically demanding job and one where the incumbent is required to stand for extended periods, lift heavy objects on a regular basis, and do repetitive tasks with few breaks.
