Hot Kitchen SupervisorSalary : $70,720Location : Inglewood (LAI)Reports to: Executive ChefJob Description/Responsibilities:Provide direction, guidance and supervision to employees to enable them to work more effectivelyKnowledge of Hot Food production processesImprove production process to increase productivity and process controlsEnsure "food ready time" is met daily for Cold Food packingEnsure all cooks accurately follow recipes and meals are produced to specification; ask questionsEnsure no shortages occur and portions control is accurately managedTrain employee in production processes and measurementsProactively attend to employee relations issues to resolve them effectively and promptlyEnsure controls are in place to manage food costs and report wasteManage rotation of hot meals produced and minimize wasteManage rotation of bulk food production to FIFOHold regular F2F communication meeting with employees to review production resultsHold regular F2F communication meeting with employees to review safety & hygieneCommunicate shift schedule changes to employeesManage production schedules and processes to minimize overtimeManage work force accountability and ensure employees have tools needed for productionPrepare purchasing orders daily for purchasing dept. to meet production requirementsPrepare daily production orders for storeroom to ensure product is pulled and thawed on time for productionEnsure that HACCP standards are achieved and control documents are completedVerify all production sheets at the end of each shift to ensure all items were producedOther Responsibilities and duties will include, but not be limited to:Knowledge of internal policies and proceduresKnowledge of HACCP requirements, GMP and sanitation requirements.Competent to work independently, ask questions and seek direction as needed.Knows and follows all safety requirements; strives to maintain a safe work environment.Effectively gives and receives feedbackMust be able to function within a team environment.Performs tasks under general supervisionPhysical DemandsThe physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job.While performing the duties of this job, the employee is regularly required to talk or hear.
