Your Role You will work side-by-side with our Executive Chef to maintain the integrity of our signature 36-hour fermented doughs, seasonal small plates, and house-made pantry staples. Key Responsibilities • Operational Excellence: Oversee daily prep and service, ensuring every dish—from the iconic focaccia to our rotating spuntini—meets Michelin standards for flavor and presentation. • Dough Management: Maintain the rigorous standards of our hydration levels and fermentation schedules. You’ll become a master of the "Sfincione Palermitano" style. • Leadership & Mentorship: Foster a kitchen culture of curiosity and respect. You’ll train line cooks on technique, efficiency, and the "why" behind our methods. • Inventory & Cost Control: Manage ordering, waste reduction, and labor costs without compromising the quality of our heritage grains or local produce. • Creative Collaboration: Assist in R&D for seasonal menu changes, bringing fresh ideas that fit within the St. Vito identity. What You Bring • Experience: At least 2–3 years of leadership experience in a high-volume, scratch-kitchen environment (bonus points for Italian or bakery-forward backgrounds). • Technique: Strong knife skills and a deep understanding of fermentation, pasta-making, and wood-fired cooking. • The "Bib" Mindset: A passion for "good food at a good price."
