Bauducco: the world's largest producer of panettone, and the largest producer of baked goods in South America.Ours is a story of a family of entrepreneurs who grew a small pastry shop into a brand now present in more than 50 countries and on every continent.About the Role:The successful candidate will play a key role in supporting the development and continuous improvement of innovative baked products, ensuring strong technical foundations in raw materials management and supplier qualification.This position requires a solid understanding of food science, baking technology, and ingredient functionality, combined with strong analytical and operational capabilities.Key Responsibilities:Product Development SupportCollaborate in the development of new baked products from concept to launch, supporting formulation, validation, and industrial scale-up.Reformulate and optimize existing recipes to meet nutritional, cost, performance, and quality targets.Prepare and document technical reports from industrial trials.Conduct and monitor shelf life and stability studies to ensure product quality and compliance.Raw Material & Supplier ManagementDevelop and maintain detailed raw material specifications, ensuring alignment with regulatory, quality, and operational requirements.Manage and monitor the approved supplier index, ensuring compliance with internal standards and continuous performance evaluation.Lead the homologation process of alternative ingredients and contra-types, including technical validation, benchmarking, risk assessment, and cost evaluation.Support strategic sourcing initiatives through technical assessments of new suppliers and ingredients.Cross-Functional Collaboration & Compliance:Work closely with Marketing, Production, Procurement, and Quality Assurance to ensure technical feasibility and successful project execution.Apply scientific and analytical methods to solve technical challenges related to product quality, process efficiency, and cost optimization.Ensure all activities comply with food safety regulations, sanitation standards, and internal quality systems.Stay up to date with industry trends, ingredient innovations, and regulatory changes relevant to bakery products.Location: Zephyrhills, FL (On-Site)**Candidate must be bilingual: English and Spanish***No relocation candidates will be considered at this time*
