Finn & Fire is seeking a skilled Sushi Chef to join our opening culinary team. This role is for someone with sharp knife skills, strong seafood discipline, and a serious understanding of clean, precise raw preparation within a Peruvian Nikkei kitchen.Our menu brings together pristine seafood, sushi technique, live-fire cooking, premium meats, bold Peruvian flavors, and the polished energy of a modern steakhouse.JOB FAIR: Date: Thursday, June 4th, 2026Time: 10am - 1pmPlease come with your resume or submit to this link Key Responsibilities Prepare sushi, sashimi, nigiri, maki, and other seafood-focused dishes according to Finn & Fire standards, including classic preparations and modernized interpretations rooted in Peruvian Nikkei cuisine.Maintain excellent knife work, fish handling, seafood storage, portioning, and presentation.Execute raw, cured, marinated, and composed seafood preparations with precision and consistency.Work confidently with Peruvian Nikkei ingredients and flavor profiles, including citrus, ají, leche de tigre, soy, sesame, herbs, and seafood-forward sauces.Maintain proper sushi rice preparation, seasoning, holding, and service standards.Support a menu that balances raw bar precision, sushi technique, live-fire cooking, premium meats, and steakhouse-style execution.Keep the sushi station organized, clean, stocked, and ready for service.Monitor freshness, pars, prep levels, waste, and product quality.Work closely with the Executive Chef and culinary leadership during prep, service, tastings, and menu development.Execute calmly and efficiently during high-volume service.Uphold strict food safety, sanitation, and temperature-control standards.Contribute to a disciplined, respectful, focused, and professional opening-team culture.Qualifications Previous experience as a Sushi Chef, Sushi Cook, Raw Bar Cook, or similar role in a serious restaurant environment.Strong knife skills and seafood handling knowledge.Experience with sushi rice, sashimi cuts, nigiri, maki, raw seafood preparation, or composed seafood dishes.Understanding of food safety standards specific to raw fish and seafood.Ability to work cleanly, quickly, and consistently under pressure.Strong attention to detail, repetition, refinement, and presentation.Professional attitude, punctuality, humility, and team-first mentality.Experience in Peruvian, Japanese, Nikkei, seafood, raw bar, steakhouse, tasting menu, fine dining, or high-standard restaurant environments preferred.Curious intelligence, coachability, and genuine interest in the craft are required.Compensation Competitive hourly rate based on experience.ScheduleFull-time and part-time positions available.
