Reports to Chef Partner
Primary Duties and Responsibilities:
Communicates with Chef to learn special needs, menus, events and important shift information
Turns on all equipment, check temperatures and ensures all equipment is working properly, safely and ready for use
Informs Manager of low product levels, faulty equipment or anything not meeting Roy’s standards
Determines quantity of product to produce based on reading par sheet
Visually inspect current stock levels and accurately fulfill par sheet production levels
Informs Chef of any product exceeding shelf life or specified for one shift use
Stocks and organizes own prep area with food product, utensils, dishes and equipment
Ensures all sanitation and security procedures are followed
Monitors supply of product and ensures work area is stocked throughout shift
Pulls and puts away prepared product and ingredients in the walk-in and freezer according to proper rotation procedures. Label, date and rotate
Prepares food product in quantities as indicated on prep sheet and according to recipe specifications
Demonstrates proper use of knives and cutting board to prepare food for cooking and serving
Assists kitchen Ohana in preparing stocks and sauces
Operates kitchen equipment according to specifications
Puts away all deliveries from Purveyors by lifting, carrying and placing items in the walk-in, freezer or dry storage areas
Maintains clean station, floors, counters, tools, cutting boards and equipment using proper cleaning solutions and sanitizing techniques
Brings all utensils, dishes and equipment to dish area for washing and assist when needed
Stores all dishes, utensils and food storage containers upside down after cleaning
Sweeps floors and empties trash as needed
Checks out with Chef before leaving to ensure all duties have been performed to standard
Additional Responsibilities:
Arrive to work on time, well-groomed, in proper uniform, ready to work
Practices proper time reporting
Demonstrates Ohana Spirit at all times to Guests and fellow Ohana
Understands and adheres to all safety, sanitation and administrative procedures
Provides complete and timely communication to Chef and Ohana
Asks for assistance when needed
Completes all assigned tasks and duties as requested by management
Minimum Requirements:
Ability to communicate (verbal and written) in English
Ability to understand and follow directions from others
Ability to perform basic math functions
Physical Requirements:
Ability to bend at the waist and lift and carry items up to 50 lbs. at waist level
Ability to move items up to 50 lbs. for a distance of u to 25 ft.
Ability to remain standing and active for an 8 -12-hour shift
Ability to tolerate exposure to cold (below 0°F) and hot (above 140°F) temperatures at times throughout shift
Ability to see, hear, understand and respond to staff member requests in a loud environment
Skill and coordination in using hands to perform kitchen duties such as cutting vegetables and preparing menu items
