Head Baker / Operations LeadLisbonata is looking for an experienced Head Baker / Operations Lead to join our  team in Brooklyn, NYC. We’re searching for someone who thrives in a fast-paced production environment, takes ownership, and is excited to help scale a modern Pasteis de Nata bakery brand focused on quality, consistency, and hospitality. ResponsibilitiesLead and manage daily bakery production operations Ensure production targets and quality standards are consistently met Oversee prep, baking, organization, and inventory flow Create and manage team schedules Train and supervise bakery staff Maintain cleanliness, food safety, and operational systems Improve workflow efficiency and kitchen organization Work closely with ownership on growth and expansion initiatives Requirements3+ years experience in a Head Baker or bakery leadership position Strong lamination knowledge and experience is a must Strong operational and organizational skills Experience managing teams in a production environment Ability to lead by example and work hands-on during service and production Reliable, detail-oriented, and proactive mindset Passion for quality-driven food businesses Compensation40-45 hours per week $32–35/hour depending on experience Growth opportunity within the company This role has strong long-term potential and may evolve into a Managing Partner position for the right candidate.
