The Server Assistant plays a key support role in the seamless execution of service, maintaining the flow and rhythm of the dining room. In this role, you will be responsible for building and resetting tables, marking flatware and glassware, running and clearing courses, maintaining water and beverage service, and ensuring the Lead Servers are consistently supported. This position requires speed, precision, and a proactive mindset to uphold Michelin-level dining and Forbes 5-star service standards.\r\nThis position is based at our JUSTIN Estate: 11680 Chimney Rock Road, Paso Robles, CA 93446. The work schedule is Thursday - Sunday (3:00 PM - 11:30 PM or closing). This position requires weekend availability and the ability to work late nights.\r\nAssist with dining room setup prior to service, including but not limited to: linens, glassware, silverware, and tabletop details, fans/heaters and other equipment\r\nMaintain the cleanliness of the interior/exterior of guest areas\r\nMaintain water service and refill beverages promptly and discreetly\r\nDeliver and clear food courses in coordination with the Captain and kitchen within FORBES 5-star service\r\nAccurately mark tables with appropriate flatware and glassware prior to each course\r\nMaintain clean and organized service stations and sidework areas throughout the shift\r\nReset and flip tables post-departure with attention to detail and speed\r\nSupport Captains with guest needs and respond quickly to requests during service\r\nBreak down and close dining room post-service, including but not limited to polishing, organizing, and restocking service tools, fans/heaters\r\nThe Server Assistant must possess a strong sense of urgency, organization, and situational awareness, with the ability to work efficiently in a fast-paced, team-oriented environment; they should know proper table settings, course progression, and stemware, communicate clearly with the service team, and maintain a discreet, polished presence in the dining room.\r\n3+ years experience in serving in casual, upscale restaurants OR 2+ years experience as a back waiter in a Forbes 5-star or Michelin restaurants\r\nAbility to work full-time (30-35 hours per week) and late nights, weekends, and holidays\r\nMust be able to communicate verbally and in writing in English\r\nStrong work ethic, willingness to learn, solution-oriented mindset, and attention to detail are essential\r\nValid Food Handler's Card\r\nClear and calm verbal communication\r\nSolution-oriented, skilled at proactively identifying service challenges and supporting servers to ensure flawless fine dining experiences\r\nAbility to work quickly in a high-paced, physically and mentally demanding environment\r\nMust comply with all uniform and grooming standards, including wearing an approved, clean, and well-maintained uniform and maintaining a neat, professional appearance and cleanliness about their person\r\nPay Rate: $19.50 - $22.00 /hour plus tips per shift.
