Kitchen Manager

The Role We are seeking a skilled and passionate Sous Chef / Kitchen Manager to support our Executive Sushi Chef and lead daily kitchen operations. This is a hands-on leadership role for someone who thrives in a high-caliber, detail-driven environment and shares our commitment to precision, seasonality, and the art of Japanese cuisine. Responsibilities Assist the Executive Sushi Chef in all aspects of kitchen operations, including prep, service execution, and quality control Oversee day-to-day kitchen management: scheduling, ordering, inventory, and cost control Uphold the highest standards of food quality, consistency, and plating across the a la carte menu, tasting menu progressions, and the Hand Roll Bar Train, mentor, and motivate kitchen staff to ensure a collaborative and professional team environment Maintain strict adherence to food safety, sanitation, and NYC Health Code standards Manage relationships with purveyors and ensure sourcing of premium, seasonal ingredients Collaborate with the culinary and beverage teams to support food and beer pairing menu development Step in to lead service in the absence of the Executive Chef Assist with private events and special programming as needed Qualifications 3–5+ years of progressive culinary experience, with at least 1–2 years in a supervisory kitchen role Background in Japanese cuisine or sushi operations strongly preferred Deep understanding of fish fabrication, nigiri preparation, and seasonal seafood sourcing Experience working in a fine dining or Michelin-recognized environment is a strong plus Strong organizational skills with the ability to manage kitchen logistics, food cost, and labor A collaborative, calm, and solutions-oriented approach to leadership Passion for hospitality and an appreciation for the intersection of food and beverage culture NYC Food Handler's certificate required; ServSafe Manager certification preferred What We Offer Competitive salary commensurate with experience The opportunity to work within a Michelin-starred culinary program A creative, ingredient-driven kitchen culture with room for professional growth Staff meals and employee discounts A tight-knit team in one of New York City's most vibrant neighborhoods More detail about Moody Tongue - New York part of MT 181 Waverly LLC, please visit
