The right candidate is comfortable working independently, enforcing standards, and directing daily workflow without constant oversight.\nThis role is designed to reduce owner involvement in daily production by placing clear authority and responsibility on-site.\nThis is not an entry-level role and not a training position. Prior commercial production experience is required.\nResponsibilities\nProduction & Brewing\nLead and participate in all mead production activities, including brewing, fermentation, cellaring, and packaging\nMonitor fermentations (gravity, pH), assist with filtration, and oversee bottling, canning, and kegging runs\nMaintain accurate batch records, cleaning logs, and production documentation\nEnsure production timelines are met consistently and efficiently\nQuality Assurance & Sanitation\nOwn sanitation standards, QA execution, and SOP enforcement\nEnsure all production areas remain clean, safe, and organized at all times\nIdentify, document, and resolve quality, process, or safety issues\nMaintain compliance and QA documentation as required (e.g., certifications, food safety, labeling support)\nOperations & Inventory\nCo-Plan production schedules to meet sales demand and inventory needs\nEnsure raw materials, packaging, and supplies are stocked and available in advance\nCoordinate with vendors, suppliers, and freight partners as needed\nMaintain organized warehouse, cold storage, and equipment areas\nTeam Leadership\nDirect daily workflow of production staff\nEnforce schedules, breaks, safety requirements, and SOP adherence\nProvide clear, direct feedback and participate in regular performance check-ins\nEscalate performance or process issues to ownership with recommendations\nCustomer & Tasting Room Support (Limited)\nSupport tasting room operations or events during peak times as needed\nRepresent the meadery professionally when interacting with customers\nDecision Authority\nThis role has authority to:\nSet daily production priorities\nEnforce SOPs and sanitation standards\nDirect production staff workflow\nPause production if quality or safety standards are not met\nOwnership will support decisions made within this scope.\nQualifications\nRequired\n3-5 years experience in a commercial meadery, brewery, or winery, with 1+ year of leadership experience\nExperience producing mead or beer/wine with transferable fermentation and cellar skills\nDemonstrated experience leading or directing production or packaging teams\nStrong organizational skills and attention to detail\nAbility to manage production timelines, quality, and safety simultaneously\nComfort enforcing standards and giving clear, direct feedback\nWillingness to perform hands-on work, including cleaning and sanitation\nAbility to lift up to 100 lbs (e.g., honey buckets, full kegs)\nPreferred (Not Required)\nExperience with QA, compliance, or production documentation\nFamiliarity with food safety, OSHA, or labeling requirements\nForklift or warehouse equipment experience\nComfort explaining fermentation or production processes to customers\nWhat This Role Is / Is Not\nThis role is:\nHands-on\nStructured\nAccountable\nDirect\nThis role is not:\nAn entry-level or training position\nA creative-only brewing role\nA flexible side gig\nA role without standards or authority\nHow to Apply\nPlease submit:\nYour resume\nA short note explaining:\nYour relevant production and leadership experience\nWhy this role interests you\nYour availability and compensation expectations\nJob Type: Full-time\nPay: $26.00 - $29.00 per hour\nBenefits:\nEmployee discount\nApplication Question(s):\nAre you located within 10 miles of Temecula?
