Supervises the planning of menus for therapeutic diets, and controls food costsSupervises food production and service programs, as well as departmental staff involvedEnsure food preparation for optimal nutrition and economic handling of food, as well as efficient usage of time. Maintain and issue a file of standardized recipes adjusted to the proper yieldPlan menus, purchase food and assign duties for special functions. Adapt master menu cycle to individual Center preference with Consultant DieticianCheck food for flavor, temperature, and appearance on a regular basis to assure that appetizing meals are presented to ResidentsWith Contract Dietician, monitor nutritional status of residents using regular assessments, progress notes and dietary care planningPrepare departmental budget on an annual basisMake frequent inspection of all work, storage areas to assure proper cleanlinessMaintains inventory of kitchen tools and food suppliesAssures all regulatory requirements are met for the preparation, storage and nutritional aspects of residential food programQualifications of Dietary SupervisorHigh school diploma or general equivalency is requiredWithin two (2) years of job start, must attain certification as Certified Dietary Manager (CDM) via Association of Nutrition & Foodservice Professionals/Certifying Board for Dietary Managers.
