JOB SUMMARY:
The Certified Dietary Manager is to provide direct nutrition service to patients. This position is to ensure quality food service is provided and prepared in accordance with current applicable state and federal regulations, facility procedures and policies, and as directed by the Administrator, Dietitian and/or Food Services Director at all times.
ESSENTIAL JOB DUTIES:
To perform this job, an individual must accomplish each essential function satisfactorily, with or without a reasonable accommodation.
Work with the facility’s dietitian to implement recommended changes, assist in planning regular and special diet menus as prescribed by the attending physician, and ensure that food is available for preparation by cooks
Order, prepare, and serve meals that are palatable and appetizing by portion control procedures, as well as for therapeutic diets by scheduled menus and sanitary regulations
Inspect special diet trays to ensure accuracy, portion control, appealing layout, etc., and evaluate kitchen and dietary area for upkeep, supply control, cleanliness and safety
Recognize and respond to dietary emergencies; document observations, interventions, and outcomes
Interpret department policies and procedures for employees, patients, families, visitors, governmental agencies
Assist in developing methods to determine the quality and quantity of food served
Assist and observe tray line
Make purchases for select menus as applicable
Monitor meals
Instruct and assist the cook as needed
Attend and participate in the patient feeding process
Review menus before preparation of food
Meet with dietary personnel to identify and correct problematic areas, and the improvement of services
Ensure food service is properly maintained to meet the needs of patients
Assist with a plan of correction for dietary deficiencies noted during survey inspections
Ensure compliance regarding safety and sanitation procedures
Instruct and assist cooks/dietary aides as needed
Assist in orientation, training, and scheduling of employees as directed
Document in the medical record, as needed
Complete production sheets for the following day
Complete forms, reports, evaluations, studies, etc. to ensure control of equipment and supplies
Other duties as assigned
JOB REQUIREMENTS:
Maintain privacy and confidentiality of all patient information and facility business
Follow the established universal precautions and isolation procedures

Successful completion of required training

REQUIRED QUALIFICATIONS:
Education:
A high school diploma or equivalent required.
o Associate’s or higher degree in food service management or in hospitality, if the course study includes food service or restaurant management, from an accredited institution of higher learning.
A bachelor’s Degree in Dietetics preferred.
Experience:
o Minimum of one (1) year of dietary experience in a supervisory capacity, preferably in a hospital, skilled nursing care facility or other medical facility
o Three (3) years experience in a hospital, nursing care facility, or other related medical facility
License/Certification(s):
o Dietary Manager Certification is recommended; however, if the employee is not certified, the employee MUST have evidence of successful completion of approved Certified manager coursework or MUST be eligible and enrolled in an approved Certified Manager’s course no later than the end of the employee’s probation period (90 days).
SUPERVISORY RESPONSIBILITIES:
Supervises dietary personnel
Accomplish department objectives by supervising staff; establish goals for performance; set deadlines in compliance with the company's plans and vision
Develop personal growth opportunities; provide constructive feedback and coaching
Organize workflow; ensure employees understand their duties or delegated tasks
Monitor employee productivity; provide constructive feedback and coaching
Maintain staff by recruiting, orienting, and training employees
Occasionally needs manager’s direction due to extraordinary circumstances
WORKING CONDITIONS:
Audio-Visual: Hearing: Good
Ability to lift to 40 pounds
Subject to standing, walking, sitting, bending, reaching, kneeling, pushing and pulling
Work is typically performed in a standard skilled nursing facility; well-lit; comfortable temperature-controlled
Above-average conversational noise is frequent
Position may require flexible hours, unscheduled overtime or occasional week-end work
Travel may be required
