DescriptionThe Heirloom Room is Rocky Waters Motor Inn's signature fine dining experience, rooted in the rich culinary traditions of Appalachia. As Sous Chef, you are the Executive Chef's right hand - a skilled culinary leader who drives daily kitchen operations, maintains uncompromising food quality standards, and develops a high-performing heart of house team. This is a role for an ambitious, hands-on culinarian who leads with pride, thrives under pressure, and is committed to both culinary excellence and team growth.What You'll DoCulinary Excellence & StandardsTake full ownership of food quality, appearance, and consistency on every shiftEnsure all food preparation, handling, storage, and sanitation practices meet AATMOS and ServSafe standardsDevelop and execute unique, flavorful, and executable recipes in collaboration with the Executive ChefMaintain full knowledge of all menu items, recipes, methods of production, and presentation standardsKitchen Operations Assist the Executive Chef with daily, weekly, and monthly inventory and ordering protocolsAssume full responsibility for overall heart of house operations in the absence of the Executive ChefEnsure highest levels of guest satisfaction while actively managing food and operating costsAdhere to all AATMOS standard operating procedures pertaining to food preparation, receiving, storage, and sanitationTeam Leadership & Development Lead, manage, and motivate the heart of house team with a positive, professional, and supportive approachTrain and oversee team members on cleanliness, sanitation, and quality standardsAssist the Executive Chef in developing and implementing training protocols to drive consistent performanceMaintain composure and objectivity under pressure, setting the standard for the team in high-volume service periodsFoster a cohesive, accountable, and high-performing kitchen cultureRequirementsWhat We're Looking ForExperience & Education Minimum 2 years of restaurant culinary leadership experience requiredCulinary degree, hospitality management degree, or equivalent on-the-job experience as a Sous ChefSkills & Abilities Strong culinary technique with the ability to create and execute recipes at a fine dining levelExcellent leadership, communication, and problem-solving skills with the ability to develop and motivate a teamPhysical & Schedule Requirements Flexible availability including evenings, weekends, and holidaysAbility to stand for extended periods and lift up to 50 lbs throughout each shiftServSafe Manager Certification required within 90 days of hire and must be maintained throughout employment
